Chicken Salad a la Babette!

I love salty savory foods & I love sweets and somewhere in between those I have to get my protein intake.

So first I decided to make a chicken breast in the oven marinated with CUBAN MOJO of course.
Along side that I put two small RED POTATOES (i peeled & cut them in little cubes), half an ORANGE BELL PEPPER, (chopped), and 4 medium stalks of ASPARAGUS (also chopped) which were all sprinkled with oregano, fresh rosemary & a dash of the most important trio: OLIVE OIL, SALT & PEPPER.

Also on the stove top I put a handful of fresh spinach to boil for like 2 or 3 minutes.

While the veggies & chicken are cooking in the oven, I prepared a little bowl of:

Light Feta Cheese (salty)
Cashews
Gooseberry (sweet)

and in a measuring cup I put very little of the following (like DASHES)
Cayenne Pepper
Black Pepper
1/4 of one Lemon Juice
Apple Cider Vinegar (MORE THAN 3 DASHES)
A super small dash of KRAFT LIGHT MAYO
TEENY DASH of Brown Sugar

*THIS MIX should be like very little. Not even 1/3 of a cup. It should be almost nothing in the measuring cup!!*

Mix that really well. I use a Aerolatte® Steam Free Milk Frother (i know it's for milk but I use it to mix my dressings & what not)

Top the Cashew/Berry/Feta Cheese mix with this and take out the CHICKEN AND VEGGIES out of the oven and stire this well into each other with the SPINACH. It is my version of the boring CHICKEN SALAD.

Try this recipe out. It sounds complicated. But I assure you it's simple and really delish!

i think it's safe to say that i'm a pretty tropical woman. i love salsa (the music that is), i love the sun shining on me (vitamin d), i love fish and i really really love spring & summer fruits! they remind me of home (sunny miami or cuba) (See CUBAN link, Andy Garcia is having a rally in ECHO PARK, Los Angeles. We start fasting for the Cubans 6am Sunday March 28th, 2010)

here we have a nice piece of salmon (from Whole Foods) seasoned with sea salt, black pepper, and the juice of 1/2 lemon and 1/2 navel orange and a dash of extra virgin olive oil. Cooked that for 2 minutes on each side and tossed it over a bed of bright green spinach (good source of Vitamin A, C, & Folate and SO MUCH MORE!) and sliced nectarines (good source of Vitamin C), topped with grape tomatos and dressed it with my homemade dressing: 1/2 juice of the other lemon and orange, 1/2 teaspoon of organic agave, red wine vinegar, dash of olive oil and pepper.

VERY FILLING! Spinach is loaded in fiber and super yummy!
